Vicki asks: "How is it going with I Cook In Color? "

My journey as a private chef has been a rewarding and enriching experience for the past two years. Preparing five dishes a week for my clients requires a great deal of flexibility and creativity on my part. Researching new dishes daily helps to maintain a variety of delicious menus. I love to expose my clients to new and exciting cuisines from around the world. Reworking classic soul food dishes and incorporating them into a healthy diet is rewarding as well.

Balancing and minimizing carbs, proteins, fats, and sodium in my menus help my clients to maintain a healthy and rewarding lifestyle. Preparing my clients meals for a week allows me a greater balance in the dishes offered. If featuring a decadent and rich pasta dish, it can be balanced with other low fat or no fat items. All weekly menu items are selected with a holistic approach.

Color is important in a healthy diet. Dishes should appeal to all of our senses. A beautiful, visually appealing plate always includes nature's bounty of fresh fruits and vegetables.

Improving and maintaining great eating habits and providing my clients with healthy food is my greatest responsibility, and my greatest reward.
