Seafood Yellow Curry

Ingredients


  • 2 eggs

  • 3 squids (fresh or frozen), 10 shrimps (fresh or frozen), 1/2 c crabmeat

  • 1 white or brown onion, finely chopped

  • 4 cloves of garlic, minced

  • 1 cup evaporated milk

  • 2 tablespoons Thai roasted chili

  • 2-3 tablespoons yellow curry powder

  • 1 tablespoon sugar

  • 2 tablespoons oyster sauce

  • 2 tablespoons soy sauce

  • 1 C of green onions, chopped


Directions


  1. To prepare the shrimp and squid for this recipe, remove the head, shell, and antennae from the shrimp, devein and rinse them thoroughly. Remove the head and innards from the squid, then cut the squid into rings.

  2. To prepare the mixed sauce for this recipe, combine two eggs with Thai roasted chili paste, oyster sauce, soy sauce, sugar, and yellow curry in a bowl.

  3. Whisk all the ingredients together until well combined.

  4. Heat a pan over medium-high heat, add garlic, and stir for 2-3 minutes until fragrant.

  5. Add shrimps and squid rings to the pan and continue stirring until they are cooked, approximately 5 minutes.

  6. Add finely chopped onion to the pan.

  7. Add the mixed savory egg sauce over the finely chopped onion and continue stirring until the egg firms up.

  8. Keep stirring for 2-3 minutes to coat the onions with the mixed sauce.

  9. Add finely chopped green onions to the mixture.

  10. Keep stirring for 2 minutes to evenly distribute the green onion.

  11. Lower the heat and serve the dish over steamed rice, optionally garnished with red chili for decoration.
