Caribbean Kitchen with Julies Gibs: Kingfish!



1-2 lbs. Kingfish sliced/cuts











Wash fish.  Season to taste with salt, pepper, and preferred seasoning

 Pan-fry fish in a little olive oil,  and cover.

In a separate pan, “combine garlic, onion, thyme and little butter sautéed add water and lemon with a little seasoning to your liking. When desired taste is reached. Pour over fish,” Cover and let simmer for about 15 minutes, until fish is flaky.

Serve with Rice and Peas, plain rice, or dumpling…. your choice of sides with salad


 

RICE AND PEAS


Of course, you can cook dry Kidney beans or crowder peas, but this is an easy-breezy recipe for this Caribbean favorite.


 Foolproof Tip: All the liquid for this recipe – water, coconut milk, liquid from beans – should add up to 4 cups



Ingredients 1 can (19oz) Kidney beans, including liquid

1 can (14 oz) Coconut milk

Water (approx 1-2/3 cups)

2 cloves Garlic, chopped

1 Small onion or 2 stalks scallion, chopped

1 tsp dried thyme

1½ to 2 tsp  Salt, to taste

1 tsp Red pepper flakes

2  cups Basmati rice (rinsed and drained)

Process 1. Drain the liquid from the can of beans into a measuring cup and add the can of coconut milk and enough water to make four cups of liquid 2. Add liquid, beans, garlic, chopped onion, and thyme to a large pot 3. Add salt and red pepper.  Bring to a boil. 4. Add rice and boil on High for 2 minutes. 5. Turn heat to Low, and cook covered until all water is absorbed (about 15 to 20 min). 6. Fluff with fork before serving.

Makes 4 to 6 Servings

 

CARIBBEAN DUMPLINGS

4 cup(s) all-purpose flour

2 tablespoon(s) granulated sugar

1 teaspoon(s) salt

1 tablespoon(s) baking powder

1 tablespoon(s) butter or margarine melted

1/4 cup(s) water

1/2 cup(s) milk

1 1/2 cup(s)  Vegetable Oil

Preparation


In a mixing bowl, combine 3 cups flour, sugar, salt, baking powder, Grace Hello Margarine, and water and mix well.  Add the milk and continue mixing, then add the remaining flour and knead well until it forms a smooth dough.


Put the dough to relax in a covered air-tight container for 1/2 an hour.


Heat Vegetable Oil in a large Dutch pot, roll dough into individual pieces.


Place the shaped dough into the heated oil and fry for about 10 minutes or until golden brown.


Drain on paper towel.
