Ingredients



  • Chicken Thighs: 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces.

  • Massaman Curry Paste: 4 to 5 tablespoons store-bought paste (such as Mae Ploy or Maesri).

  • Coconut Milk: 2 cans (14 oz each) full-fat coconut milk.

  • Potatoes: 1 lb Yukon Gold or waxy potatoes, peeled and cut into 1-inch chunks.

  • Chickpeas: 1/2 C

  • Onion: 2 medium red or yellow onions, cut into large chunks.

  • Peanuts: 1/4 cup roasted, unsalted peanuts (roughly chopped).

  • Tamarind Paste: 2 tablespoons.

  • Sugar: 2 tablespoons palm sugar or brown sugar.

  • Fish Sauce: 2 to 3 tablespoons.

  • Aromatics: 2 cinnamon sticks and 2 bay leaves.

  • Oil: 2 tablespoons neutral cooking oil. [1, 2, 3]


Instructions


  1. Heat the Oil and Paste: Warm the oil in a large pot over medium heat. Add the Massaman curry paste and stir for 1–2 minutes until fragrant.

  2. Split the Coconut Milk: Scoop about 1/2 cup of thick coconut cream from the top of your coconut milk cans into the pot. Stir and cook for a few minutes until the oil begins to separate and bubble through the paste.

  3. Brown the Chicken: Add the chicken pieces to the pot. Stir well so the meat is fully coated and lightly browned. 

  4. Simmer the Base: Pour in the remaining coconut milk along with 1 cup of water. Drop in the cinnamon sticks and bay leaves. Bring to a gentle boil, then lower the heat. 

  5. Add Vegetables: Add the cubed potatoes, chickpeas, and onion chunks. Cover the pot and simmer on low heat for 20 to 25 minutes until the potatoes are fork-tender and the chicken is cooked through. 

  6. Season: Stir in the fish sauce, tamarind paste, and sugar. Taste the curry and adjust the balance of sweet, salty, and sour flavors to your liking. 

  7. Garnish and Serve: Stir in the chopped roasted peanuts just before serving. Serve hot over a bed of steamed jasmine rice.
