Have you bought Skinny Pasta yet? I tell you, I love the fettuccine and eat it at least twice a week. Low cal (only 9 cals per 2 cups), I add it to so many of my "Lazy" dishes. Why is this hot salad lazy? Maybe 15 mins. all in.
Ingredients
1 Tbspn Olive oil
2 cloves chopped garlic or 1/2 Tspn of minced garlic
5 Frozen Jumbo shrimp, thawed
2 Sweet peppers sliced
2 Marinated Artichoke leaves from a jar
4 Black olives
1 Tspn smoked Tomatoes
1/2 bag Skinny noodles
Sazon and a bit of red pepper to taste. Use whatever seasoning you choose
Here's the kicker: I used the mixed salad I had on hand. ( I usually buy a mixed kale salad - it has all the greenery. ) I always add spinach.
Preparation
I use cast iron, but you can use any skillet. Heat oil at medium heat. Add peppers, artichoke heart leaves, olives, and tomatoes. Then, garlic, shrimp, salad mix, and noodles. Add the spices and stir-fry until the salad heats through, then simmer a bit. Not too long; remember the shrimp.
I always eat these lazy meals from a bowl, adding feta cheese, and maybe heated, buttered sourdough bread. But you get the idea. Be creative. Oh...always my afterthought, I am never afraid to add Sriracha sauce to anything I cook. It makes everything taste better.
Enjoy!!
