From My Kitchen: Mushroom & Mutter

Mushroom & Mutter subji (vegetable) is very healthy and delicious vegetable curry to have with rice or chapatti. It is simple and easy to make. This serving is for two people. Double the quantity for four or leftovers. Weekly, fortnightly planners may also choose to freeze this dish for later use.

INGREDIENTS

1 cup Mushrooms

1 cup Mutter (Green Peas)

1 cup Plain Yogurt

2+2 tablespoons oil

2 Onions

3 Tomatoes

4 Cloves of Garlic

1 spoon Ginger

2 Green Chilies

1 spoon of cut Cilantro or Spring Onions for garnish.

Salt, turmeric, red chili powder and Garam Masala as per taste

1 teaspoon of Cumin seeds

Let’s start this amazing and fantastic curry.

METHOD

  1. Add 2 tablespoon oil in a pan and sauté chopped onions for 3 mins.

  2. After the onions turn golden brown add grated garlic, ginger and chilies. saute for another 3 mins. Add salt.

  3. Add chopped tomatoes and sauté until pan leaves oil.

  4. Cool this mixture and grind to a slightly coarse texture. This is your gravy.

  5. Put 2 tablespoon oil in a pan and then add cumin seeds. Wait until they stop crackling.

  6. Add gravy in the pan with salt, turmeric and Garam Masala. Let the gravy sauté for 2-3 mins.

  7. Chop mushrooms in quarter pieces. Add yogurt, mushrooms & mutter (green peas) to the gravy. Let it cook for five minutes. When oil leaves the pan curry is ready.

  8. Garnish with cilantro or spring onion.
