Khandvi: Flavor Of India

Passion is the energy that keeps me going, that keeps me filled with meaning, and happiness, and excitement, and anticipation. Passion is a powerful force in accomplishing anything I set my mind to, and in experiencing work and life the fullest extent possible. Ultimately, I believe passion is the driving force behind success that allows us all to live better lives.

So here I light my inner passion with food. I introduce Khandvi, a traditional Indian recipe.

Khandvi is very popular snack item in the state of Gujarat, India. It’s unique soft and nice flavour often makes it kids and adult’s favourite snack. It is a microwaveable recipe. Easy to prepare and does not need deep frying, hence healthier.

Ingredients: 1 cup gram flour 1 cup yogurt 1 cup water Salt, as per taste Asafoetida, a pinch Turmeric, a pinch Oil, 1 tbsp Mustard seeds Cumin seeds (Optional) Sesame seeds Shredded coconut Green chillies Coriander leaves

Serves: The above quantity serves 2 persons for a light tea-time snack. For more people just double the quantity.

Duration: 10-15 minutes.

Preparation: 1) Mix flour, yogurt and water using a hand blender. Add little salt and turmeric for taste and color. Put it in a bowl in microwave for 2 minutes. Take it out and stir it with a fork. Put the mix again in the microwave for 2 minutes, remove and stir again. It should be a smooth paste. The mix is ready now.

2) Using a spoon spread the mix out on foil. Make it long and thin as possible. Let it cool for 5 minutes while you prepare the garnish.

3)  Take a skillet and heat 1 tbsp oil. Add a tsp of mustard seeds, a pinch of asafoetida, sesame seeds and finely cut chillies. When you hear the mustard seeds start to crackle, turn off your stove.

4) Now, we return to our mix on the foil. Using a knife cut through the length making 1.5 inch separates. Gently lift the spread from one end and roll it to the other. Set these little rolls on a service tray.

5) Pour the sizzling skillet contents on top of the rolls. Add shredded coconut and Coriander leaves.

Complementing Drink:

Chai Tea, of course! You can serve Khandvi hot or cold.
